Tamarind is a hardwood tree known scientifically as Tamarindus indica. … The tree produces bean-like pods filled with seeds surrounded by a fibrous pulp. The pulp of the young fruit is green and sour. As it ripens, the juicy pulp becomes paste-like and more sweet-sour.
Tamarind can be eaten straight off the tree and can be found in many Latin American and Asian groceries. First, you need to crack and peel away the hard brown shell. Inside, you’ll find reddish-brown-colored pulp and twig-like veins. Remove the veins from the fruit.
